Banana Chocolate Crepes

Crepes are a thinner more fruit filled version of pancakes and are a family favourite in our house. Since my daughter got a hold of a wonderful recipe from a Chef she met in Turks & Caicos, it has become a weekend tradition for her to make them. She wanted me to share the recipe with you so you could enjoy them too. Here it is straight from Chef Jose’s recipe book.

  • 2 eggs
  • 1/2 cup milk
  • 1/8 tsp salt
  • 1/2 tbsp sugar
  • 1/3 cup cold water
  • 1 tsp vanilla extract
  • 1/2 cup melted butter
  • 3/4 cup flour
  • Nutella (optional)
  • 1-2 Bananas (or any fruit)
  1. Melt butter in microwave safe bowl in microwave for approx 45 seconds.
  2. Mix eggs, milk, salt, sugar, water, vanilla and melted butter together in a medium sized bowl.
  3. Wisk in flour till there are no lumps.
  4. Heat large non-stick frying pan on medium heat.
  5. Once hot pour thin layer of batter, approx. 1/2 cup into pan and swirl around so it thins out to the whole pan.
  6. When crepe looks mostly dry, use a spatula (or two) to flip the crepe over .
  7. Continue to cook till crepe is dry.
  8. Remove from pan.
  9. Repeat with the rest of the batter.
  10. Spread nutella on 1/4 of circular crepe (optional)
  11. Place banana (or any fruit) slices on the nutella.
  12. Fold crepe in half and then in half again.
  13. Serve warm.
Tips: The thinner the crepe the better.
