Strawberry Yogurt Bites

yogurt bitesSummer and Strawberrys… Sigh! This month I wanted to create a refreshing summer treat that serves a bunch, because what will you feed a bunch of friends when they come over to hang this summer? This recipe requires a couple hours notice as it needs to set in the freezer, but thankfully you won’t have to turn on the stove (isn’t it hot enough?) and it only takes 3 ingredients which you probably already have in the fridge.

  • 6-10 Large Strawberries
  • 2 cups Plain Greek Yogurt (or use Honey Greek Yogurt and omit the honey)
  • 2 tbsp honey
  1. Wash and chop strawberries into dime sized pieces.
  2. Arrange strawberries in rows on a baking sheet lined with parchment paper.
  3. Mix Yogurt and honey in a bowl
  4. Fill a plastic sandwich bag with yogurt and seal.
  5. Cut one corner off the sandwich bag.
  6. Pipe a dap of yogurt onto strawberry pieces to cover them.
  7. Place baking sheet in the freezer (approx. an hour)
  8. Remove bites from baking sheet and serve in a bowl or store in the freezer for later.

You can also use chocolate greek yogurt (omit the honey) with banana pieces.
