A lassi is a chilled yogurt drink common in India. I found this recipe on the Spoonful website when I was looking for things to do with the mint that has taken over the garden and when I made it my daughters asked for seconds. This is a great way to start the day when you don’t have much time in the morning… and as an added bonus your breath is minty fresh after!
- 16 oz Plain low-fat Greek-style yogurt
- 1 cup sliced strawberries
- 10 mint leaves
- 1/4 cup skim milk
- 1 tbsp honey
- 1/2 cup ice
- Layer yogurt, strawberries, mint, honey, milk and ice in a blender. Cover and pulse until smooth. If necessary turn blender off, remove lid and use a spatula to scrape down the sides and immerse the berries, then blend again.
- Pour into glasses and serve immediately.
