Strawberry Mint Lassi

A lassi is a chilled yogurt drink common in India. I found this recipe on the Spoonful website when I was looking for things to do with the mint that has taken over the garden and when I made it my daughters asked for seconds. This is a great way to start the day when you don’t have much time in the morning… and as an added bonus your breath is minty fresh after!

  • 16 oz Plain low-fat Greek-style yogurt
  • 1 cup sliced strawberries
  • 10 mint leaves
  • 1/4 cup skim milk
  • 1 tbsp honey
  • 1/2 cup ice
  1. Layer yogurt, strawberries, mint, honey, milk and ice in a blender. Cover and pulse until smooth. If necessary turn blender off, remove lid and use a spatula to scrape down the sides and immerse the berries, then blend again.
  2. Pour into glasses and serve immediately.
The mint is optional but try it first cause its kind of amazing with the strawberries.
