Raspberry Nice Cream

nicecream1What could be better than ice cream for breakfast? Mom allowing ice cream for breakfast! Yup! You read that correctly. Here is a healthy way of eating ice cream for breakfast and Mom will approve. This dairy-free, all fruit “Nice Cream” recipe was inspired by www.tworaspberries.com and consists of three ingredients and none of them are sugar or cream. Try it for yourself you will LOVE it.

INGREDIENTS
  • 3 Bananas
  • 1/2 cup frozen raspberries (or strawberries)
  • 1-3 tbsp water
INSTRUCTIONS
  1. Peel Bananas and cut into quarters. It is such a pain to get the peels off after they are frozen.
  2. Spread banana chunks (and raspberries if you are using fresh raspberries) in a single layer on a baking sheet lined with parchment paper.
  3. Place baking sheet in freezer for at least 2 hours.
  4. Add bananas and 1 tbsp of water to food processor or blender and blend.
  5. Slowly add additional water until smooth. You may have to stop the blender and scrape down the sides a couple times.
  6. Add frozen raspberries to blender and pulse until blended but still chunky.
  7. Spoon into a bowl and serve.
NOTES:
For best taste make sure bananas are yellow with a bit of brown spots before you freeze. Also this recipe requires a bit of planning if you want it for breakfast, so try to freeze the fruit the night before.
