Purple Pudding

So this pudding isn’t really purple… I suppose I can see how it could have had a purple tinge the first time I made it, but the point is my daughters started calling it Purple Pudding and now that’s how we refer to it. It’s much better for you and tastier than the instant pudding and don’t worry, you can’t even taste the avocado! Sprinkle with graham cracker crumbs or top with fruit for extra flare and flavour. I modified this www.ohsheglows.com recipe that inspired Purple Pudding.

  • 3 small avocados, pitted and scooped out
  • 1/3 cup almond milk
  • 1/4 cup pure maple syrup
  • 1 tbsp smooth peanut butter (or other nut or sunflower seed butter)
  • 1 tbsp arrowroot powder or tapioca powder
  • 1/4 tsp salt
  • 1 tsp pure vanilla extract
  • 1/4 cup cocoa powder
  1. Put all ingredients together in a blender and mix until smooth.
  2. Scoop into bowls and serve.
NOTES: If you put Purple Pudding into a Graham Cracker Crust or Cookie Crumb Crust and freeze it, then it becomes Purple Pie!
