Protein Rice Krispie Treats

RiceKrispiesIf you found a way to make Rice Krispie Treats healthy, would you eat them all the time? I think I might! I’m not sure this recipe could be considered healthy enough to eat all the time but it’s definitely more healthy and packed with protein so as to make for a healthy choice on the run or for a quick after or before sports boost. I adapted this from a recipe I found on runningwithspoons.com. These are no bake and easy to make, so enjoy!

INGREDIENTS
  • 4 cups Kellogg’s Rice Krispies Cereal – Brown Rice
  • 1/2 cup protein powder (we used Organic Hemp Pro fibre)
  • 1/4 cup peanut butter (or any nut butter)
  • 1 Tbsp. coconut oil
  • 1/2 cup honey
INSTRUCTIONS
  1. Spray 8×8 baking pan with cooking spray (or rub bottom and sides with shortening or butter). Set aside.
  2. Mix cereal and protein powder in large bowl. Set aside.
  3. In microwave safe bowl mix peanut butter, coconut oil and honey
  4. Melt in microwave by heating for 30 seconds at a time and mixing between until smooth and warm.
  5. Pour melted mixture into Rice Krispie mixture and stir till combined.
  6. Transfer mixture into prepared baking pan and press down with wide spatula.
  7. Place baking pan into refridgerator for at least 30 minutes
  8. Cut into squares and enjoy.
NOTES:
Keep covered in refrigerator in unlikely event they all don’t get eaten right away.
