Pizza Poppers

pizzapoper2Imagine you’re having friends over after school for a study session. What are you going to feed them? Veggies? Chips? Pizza Poppers to the rescue! They are a quick and easy recipe that only takes 20 minutes to bake, are easy to serve and will keep everyone going through the study session. They also work well for pool parties or pot lucks.

INGREDIENTS
  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1 tsp garlic powder
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 1 1/2 cups milk
  • 2 eggs
  • 2 cups Italian mix or Pizza shredded cheese
  • 1/2 cup grated Parmesan
  • 2 cups diced pepperoni (optional)
  • 1 cup pizza (or spaghetti) sauce
INSTRUCTIONS
  1. Preheat your oven to 375 degrees. Get help with the oven from a parent if needed.
  2. In a large bowl, mix flour, baking powder, garlic powder, oregano and basil.
  3. Stir in milk and egg.
  4. Fold in shredded cheese, grated parmesan and pepperoni.
  5. Let mixture stand for 10 minutes.
  6. Stir then pour or scoop batter into greased mini muffin tin.
  7. Bake 20-25 minutes.
  8. Serve with warmed pizza sauce for dipping.
  9. Makes 48 poppers.
NOTES: For a diary free option use almond milk instead of milk, omit the cheese and parmesan and add 1 tsp pizza seasoning. You probably won’t have any left over, but if you do, keep them sealed in an airtight container.
