Outstanding Oat Pancakes

pancakesI got this recipe from my friend Kelly, who dislikes pancakes out of a box as much as I do. These hearty pancakes make for a filling breakfast, lunch or dinner. Made from fresh ingredients and topped with fruit, they make a healthy and quick alternative to pancake mix.

INGREDIENTS
  • 1 1/2 cups quick oats
  • 2 cups milk
  • 3 eggs
  • 1/4 cup vegetable oil
  • 1 cup all purpose flour
  • 2 tbsp sugar
  • 2 tbsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp ground cinnamon
INSTRUCTIONS
  1. Mix oats and milk in large bowl and set aside for 5 minutes
  2. Stir in eggs and oil and mix well
  3. In medium size bowl combine flour, sugar, baking powder, salt and cinnamon.
  4. Add to oat mixture stirring until smooth.
  5. Spoon batter by 1/4 cupfuls onto preheated, griddle or frying pan. Optionally, sprinkle with fruit such as bananas or blueberries.
  6. Cook until bubbles start to break on the surface and bottom of pancake is golden.
  7. Turn and cook the other side.
  8. Serve hot with Maple syrup, fresh fruit or both.
NOTES
You can freeze left over pancakes and pop them in the toaster later.
