I got this recipe from my friend Kelly, who dislikes pancakes out of a box as much as I do. These hearty pancakes make for a filling breakfast, lunch or dinner. Made from fresh ingredients and topped with fruit, they make a healthy and quick alternative to pancake mix.
INGREDIENTS
- 1 1/2 cups quick oats
- 2 cups milk
- 3 eggs
- 1/4 cup vegetable oil
- 1 cup all purpose flour
- 2 tbsp sugar
- 2 tbsp baking powder
- 3/4 tsp salt
- 1/2 tsp ground cinnamon
INSTRUCTIONS
- Mix oats and milk in large bowl and set aside for 5 minutes
- Stir in eggs and oil and mix well
- In medium size bowl combine flour, sugar, baking powder, salt and cinnamon.
- Add to oat mixture stirring until smooth.
- Spoon batter by 1/4 cupfuls onto preheated, griddle or frying pan. Optionally, sprinkle with fruit such as bananas or blueberries.
- Cook until bubbles start to break on the surface and bottom of pancake is golden.
- Turn and cook the other side.
- Serve hot with Maple syrup, fresh fruit or both.
NOTES
You can freeze left over pancakes and pop them in the toaster later.
