Oatmeal Banana Breakfast Cookie

breakfastcookie1I always find breakfast the hardest meal of the day. Most good breakfast choices take too long in the morning. I love the concept of a quick breakfast bar but most store bought brands have so much sugar I might as well eat a cookie. Which is what gave me the idea to make a Breakfast Cookie from my yummiest Oatmeal Chocolate Chip Cookie Recipe. With the help of GGC Dietitian Joanne, I think we came up with something that is packed with goodness and still tastes good. And the best part is you can make them the night before and you have a weeks worth of easy grab-and-go breakfast.

  • 1/3 cup butter
  • 1/2 cup unsweetened apple sauce
  • 1/2 cup brown sugar
  • 1 banana, mashed
  • 1 egg
  • 2 tsp vanilla
  • 3/4 cup flour
  • 1/2 cup bran
  • 3/4 tsp baking soda
  • 1 tsp cinnamon
  • 3 cups quick oats
  • 1/4 cup Pumpkin Seeds (optional)
  • 1/4 cup Mini Chocolate Chips (optional)
  1. Mix butter, apple sauce, brown sugar, banana, egg and vanilla.
  2. In another bowl combine flour, bran, baking soda and cinnamon.
  3. Add to liquid mixture and stir till blended.
  4. Stir in oats, pumpkin seeds and chocolate chips.
  5. Drop dough by heaping tablespoonfulls onto greased baking sheet
  6. Press flat with spoon.
  7. Bake at 350 for 12-15 minutes or until edges are golden brown.
  8. Do not overbake
  9. Transfer to a wire rack to cool.
Store in an airtight container.
