No Bake Energy Bites

energybitesAny recipe that can pass for healthy and has simple ingredients AND is no bake!… is a keeper in my books. These bite sized bad boys pack a punch of protein and fiber to hold you over till dinner. Keep them in the fridge to grab and go after school and before activities. I found this recipe on

  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1 tsp vanilla extract
  • 1 cup old-fashioned oats (raw)
  • 2/3 cup sweetened shredded coconut, toasted and cooled
  • 1/2 cup ground golden flaxseed meal (I used a cereal blend called “Skinny B” of chia seeds, hemp hearts and buckwheat. You can use any seeds you like)
  • 1/3 cup mini chocolate chips (I chopped 1 square of semi-sweet chocolate because I ran out of chocolate chips)
  1. In a mixing bowl, stir together peanut butter, honey and vanilla extract.
  2. Add remaining ingredients and stir until evenly coated.
  3. Roll tablespoonful sized portions into 1″ balls.
  4. Store in refrigerator in an airtight container.
NOTES: You can refrigerate the dough before rolling for ease of shaping.
