Freshly Squeezed Frozen Lemonade

frozenlemonadeI was having a summer drink craving and cobbled this recipe together from many that I found on the web. It was such a simple recipe that my niece, Amy, and I did some experimenting and after a few tries we think we got it just perfect. Here’s the results of our valiant efforts.

INGREDIENTS
  • 3/4 cup water
  • 3/4 cup sugar
  • 3 or 4 lemons
  • 5-6 cups ice cubes
INSTRUCTIONS
  1. Pour water and sugar into a small to medium sized pot. Place on stove top on high.
  2. Boil without stirring for about 5 minutes. This will make 1 cup of Simple Syrup. Set aside to cool (place in fridge if needed).
  3. Meanwhile, juice lemons by cutting in half and squeezing. We used a plastic juicer you can get at the dollar store so as to get the maximum juice from each lemon.
  4. Strain the juice and optionally, remove the seeds from the pulp and put the pulp back in the juice to have more juice.
  5. Pour 1 cup of the cooled Simple Syrup, 1 cup lemon juice and 5 cups ice cubes into a blender.
  6. Blend on a medium setting for larger ice chunks and a higher setting for slushy like consistency.
  7. Pour into cups and enjoy immediately.
  8. Optional: For strawberry frozen lemonade add 1 cup of frozen strawberries before blending.
NOTES
You can tweak the amounts of each ingredient in the blender to achieve a sweeter (add more simple syrup), or more sour (add more lemon juice) lemonade. Have fun experimenting, we did!
