Crispy Parm Endamame

Endamame is a green soy bean. They come in a shell or already shelled. Mostly you would find them in the frozen food aisle. These are very healthy and tasty on there own when steamed and salted but today I’m adding some flavour to make it more like a popcorn kind of snack.

INGREDIENTS
  • 1 (12 ounce) package frozen shelled edamame
  • 1 tbsp Olive Oil
  • 1/4 cup grated parmesan cheese
  • salt and pepper to taste
INSTRUCTIONS
  1. Preheat oven to 400 degrees
  2. Line a baking sheet with parchemnt paper (this is important so the beans don’t stick to the pan)
  3. Pour Endamame in a collander (strainer) and rinse under cold water to thaw
  4. Drain and pour onto a paper towel to pat dry.
  5. Combine beans, olive oil, parmesan and salt and pepper in a bowl and stir till the beans are coated or put a lid on the container and shake.
  6. spread mixture in a single layer onto parchment paper lined baking sheet.
  7. Bake in oven for 15 min or until cheese is golden. (ask an adult to help with the oven if needed)
  8. Enjoy warm or place in sealed container for later.
NOTES
These make a great after school snack or to take in your lunch to school. This recipe works well with green beans also.
