Just as its getting chilly out we bring you a fast, warm, cozy, treat that you and a friend can enjoy. Try this Cinnamon Spice (and everything nice) mug cake that you can make in 5 minutes or less using the microwave. Great for brightening someones morning (think no mess breakfast in bed for mom or dad). Or a warm after school snack to share with a friend on a chilly November day. INGREDIENTS
- 1 1/2 tablespoon butter
- 2 1/2 tablespoons sugar (2.5 tbsp = 2 tbsp + 1.5 tsp)
- 2 tablespoons applesauce
- 1/8 teaspoon vanilla extract
- pinch of salt
- 1/4 cup flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon cinnamon
For the Topping:
- 1 tablespoon butter
- 2 tablespoons flour
- 1 tablespoon brown sugar
- 1/4 teaspoon cinnamon
INSTRUCTIONS
- Melt 1 1/2 tablespoon butter in a 16 oz mug by microwaving for 20 seconds.
- Remove mug from microwave and stir in sugar.
- Add applesauce, vanilla extract, pinch of salt, flour, baking powder and cinnamon.
- Mix till resembles batter, scrapping down from sides of mug.
- For the topping: In another small microwavable container, soften 1 tablespoon of butter in microwave for 15 seconds.
- Add flour, brown sugar, and cinnamon and mix till resembles crumble.
- Sprinkle topping crumble onto batter in the first mug.
- Microwave the mug cake for 45 seconds
- If cake looks moist on top, microwave again for 10 seconds. Repeat until cake looks set on top. Do not over cook.
- Let cool for 1 minute and then enjoy cake while warm.
NOTES:
Be careful, mug and cake will be hot. Ask for an adults help if needed.
