Chocolate Covered Nice Cream Bites

What is Valentine’s Day without chocolate? So we cheated a little on this recipe and added a not-so-healthy chocolate coating to a healthy iced creamy filling and we have a some-what-healthy recipe for Valentine’s Day sweets that will literally melt in your mouth. This recipe was inspired by allergyfreealaska.com except we used our Nice Cream recipe from last February’s Chef’s Club with Strawberries this time.

INGREDIENTS
  • 3 Bananas
  • 1/2 cup frozen strawberries (or raspberries)
  • 1-3 tbsp water
  • 1 cup chocolate chips
  • 3 tablespoons coconut oil
INSTRUCTIONS
  1. Peel Bananas and cut into quarters.
  2. Place banana chunks in a freezer bag and lay flat in freezer for at least 2 hours.
  3. Mix Yogurt and honey in a bowl
  4. Add bananas, frozen strawberries and 1 tbsp of water to food processor or blender and blend.
  5. Slowly add additional water until smooth. You may have to stop the blender and scrape down the sides a couple times.
  6. Spoon nice cream into heart mould or ice cube tray. You could also use a melon baller or small spoon to drop small balls of nice cream onto parchment lined tray.
  7. Place mould(s) or tray(s) in the freezer (approx. an hour)
  8. After the hour is up, in a microwave safe bowl, combine chocolate chips and coconut oil.
  9. Heat in microwave for 30 second intervals, stirring between each, until chips are melted and smooth. (get help with the microwave if needed.)
  10. Remove nice cream from the moulds and dip in chocolate, then place on a lined tray.
  11. Freeze again for 10-15 minutes. Then serve.

NOTES: This recipe made approx 24 hearts.
