Blueberry Bran Muffins

blueberryThese blueberry muffins bursts with sweet blueberries, which are a wonderfully healthy super-food. Whip up a batch with some friends for a smart study break food or after school snack. While they don’t take long to bake, ask for help with the oven, if needed. This recipe was provided by Joanne, our Ask An Expert registered dietitian, and has quickly become a favorite at our house for breakfast.


  • 3/4 cup oat bran
  • 1/2 cup quick-cooking rolled oats
  • 1/2 cup whole wheat bran
  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/2 cup lightly packed brown sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • Pinch salt
  • 2 eggs
  • 1/2 cup skim milk
  • 1/3 cup butter, melted
  • 1 cup blueberries
  1. Preheat oven to 400 degrees.
  2. In a large bowl, combine oat bran, oats, wheat bran, whole wheat flour, all-purpose flour, brown sugar, baking powder, baking soda, cinnamon and salt.
  3. In another bowl, whisk together eggs, milk, and melted butter. Add to flour mixture and stir with a wooden spoon until just combined.
  4. Fold in blueberries.
  5. Spoon batter into prepared muffin cups and bake in preheated oven for 20 minutes or until a toothpick inserted in the center comes out clean.
Makes 12 muffins.
