After all the sweets from the holidays I thought I would try something a little more healthy. Chicken nuggets that taste fried but are baked crispy are a great recipe that you will love and Mom will approve. I adapted this recipe from www.jocooks.com using instead of panko, a breading of Brown Rice Krispies so that this is also gluten free. Try it for yourself but get help with the oven if needed.
INGREDIENTS
- 4 chicken breasts, boneless and skinless, cut into 1 inch pieces
- 2 eggs, beaten
- 4 cups Brown Rice Krispies
- sesame seeds, optional
- 1/4 cup honey
- 1/4 cup soy sauce
- 3 garlic cloves, minced
- salt and pepper to taste
INSTRUCTIONS
- Preheat oven to 375 F degrees.
- Line a baking sheet with parchment paper.
- Crush Rice Krispies in blender to form crumbs then place in large sealable bag
- Pour beaten eggs into a bowl and season with salt and pepper
- Place chicken pieces into the egg bowl and toss to make sure each piece is fully coated in the egg mixture.
- Place egg coated chicken into the bag with the crumbs and shake so that each piece is fully coated in crumbs.
- Spread crumb coated chicken on baking sheet.
- Bake in preheated oven for 20 minutes or until chicken is cooked through and slightly golden.
- While the chicken is cooking, add honey, soy sauce and garlic to a small sauce pan.
- Bring to a boil over medium heat.
- Turn down the heat to low and stir for 2-3 minutes.
- Pour sauce over chicken and toss to coat.
- Garnish with sesame seeds (optional)
NOTES:
You can use the sauce as a dipping sauce instead of coating the chicken for fussy friends.
