Baked Honey Garlic Chicken Bites

chicken bitesAfter all the sweets from the holidays I thought I would try something a little more healthy. Chicken nuggets that taste fried but are baked crispy are a great recipe that you will love and Mom will approve. I adapted this recipe from using instead of panko, a breading of Brown Rice Krispies so that this is also gluten free. Try it for yourself but get help with the oven if needed.

  • 4 chicken breasts, boneless and skinless, cut into 1 inch pieces
  • 2 eggs, beaten
  • 4 cups Brown Rice Krispies
  • sesame seeds, optional
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 garlic cloves, minced
  • salt and pepper to taste
  1. Preheat oven to 375 F degrees.
  2. Line a baking sheet with parchment paper.
  3. Crush Rice Krispies in blender to form crumbs then place in large sealable bag
  4. Pour beaten eggs into a bowl and season with salt and pepper
  5. Place chicken pieces into the egg bowl and toss to make sure each piece is fully coated in the egg mixture.
  6. Place egg coated chicken into the bag with the crumbs and shake so that each piece is fully coated in crumbs.
  7. Spread crumb coated chicken on baking sheet.
  8. Bake in preheated oven for 20 minutes or until chicken is cooked through and slightly golden.
  9. While the chicken is cooking, add honey, soy sauce and garlic to a small sauce pan.
  10. Bring to a boil over medium heat.
  11. Turn down the heat to low and stir for 2-3 minutes.
  12. Pour sauce over chicken and toss to coat.
  13. Garnish with sesame seeds (optional)
You can use the sauce as a dipping sauce instead of coating the chicken for fussy friends.
